If you recall, in my earlier blog post, I had shared the recipe of how to make Goda Masala at home, the quintessential Maharashtrian Spice Mix. I had a reader requesting for few recipes with Goda Masala which made me blog about the Masale Bhat today. I, however, decided to include Shenga Drumstick or Moringa for turning the recipe super healthy. You can alternatively try this recipe using Mixed Vegetables too like peas, french beans, potato and carrots.

Not only in India, consumption of this super food has doubled in other parts of the world in recent times. As South Indians, we have been consuming Moringa since childhood. Both essentially require Moringa.

I have a recipe on my blog, Drumstick Poriyal which is low oil, gluten free, vegan and a great side for Khichdi or rotis too. The Moringa plant has medicinal propertiesis diabetic friendly as it regulates blood sugar levels. It is great for digestive healthhigh in calcium and Vitaminshelps in blood purification and is a immunity booster.

This recipe requires low prep work soaking rice and peeling, chopping the drumsticks, onions and tomatoes etc takes about 20 minutes. We usually just enjoy it piping hot with some curd on the side or if I am particularly not feeling lazy, make a quick Raita.

Another thing I love adding in Masale Bhat are peanuts. I love the taste it lends to the bhat or rice and I always feel, Maharashtrian cuisine is incomplete without peanuts.

Also, it instantly took me back to my childhood memories, when one of my friends from school who was a Marathi used to bring this rice dish packed in her Lunch Box, and we all friends loved it so much that every now and then we used to tell her to bring it again so that we can eat more.

Well, after so many years, when I ate it again at a friends place again, I knew I had to go home and try my hands on this recipe. And since then, I often make this one-pot meal at home for my weekday meals.

This Masala Bhat is also a must recipe during weddings, special occasions or even festivals in Maharashtra. It is a one-pot recipe made using short-grain Indrayani rice, fresh veggies like carrots, peas, ivy gourd, eggplant, potato and cauliflower and dried Indian spices.

Onion, ginger and garlic are also added to Masale Bhat to give it a strong flavour. This delicacy is so yummy that you will like to savour it again and again, like me! As the recipe for making this dish is simple, it saves you a lot of time. Here, I have used carrots, green peas, eggplant, ivy gourd, potato and cauliflower, but you can add vegetables of your choice too. Along with the rice and veggies, other ingredients that are required to make this Masale Bhaat are oil, cumin seeds, ginger garlic paste, green chillies, turmeric powder, salt, red chilli powder, goda masala powder and garam masala powder.

Firstly dry roast sesame seeds, desiccated coconut and poppy seeds separately until fragrant or changes its colour and remove in a plate. Now heat a little oil and roast the other ingredients separately one by one except red chilli powder and salt.

Once everything cools down add the roasted ingredients along with red chilli powder and salt in a mixer grinder to make a powder. For the weddings, this Bhat is made without using onion and garlic and ivy Gourd or tendli is definitely added to it along with a mix of other vegetables.

To make Maharashtrian Wedding Delight, Masale Bhat without onion and garlic, keep the below-mentioned process same but just skip adding these two ingredients. You can make this rice in a pressure cooker as well. Follow the same recipe in a pressure cooker.Every family has their own Goda Masala Recipe. This recipe gets used in most dishes daily. Gently mix everything together. Follow the same steps and close the lid place a whistle and cook for 2 whistles on medium flame. If you are unable to find tindora or tendli ,you can replace with any vegetable of your choice like potato ,egg plant or bell peppers.

This is a delicious, healthy and vegan recipe of spiced brinjal rice from the Karnataka cuisine. Vangi means, brinjal, baingan, aubergines or eggplant. Bhath or bath or baath means rice. Preparing vangi bath is very easy. All you need is to cook the rice first.

Then prepare the brinjal gravy. Then mix the rice with the brinjal gravy. If you have extra cooked rice or leftover rice, then the vangi bath is quicker to prepare. In this recipe, I have used readymade organic vangi bath masala powder from the Phalada brand.

The taste of the vangi bath depends on the quality of the vangi bath masala. So do use a good quality one. You can use homemade or store brought. Generally, green brinjals are used.

But you can also use purple or purple striped brinjals. Just make sure that the brinjals are tender and fresh. You can use any regular variety of rice like sona masuri. This is a no onion no garlic recipe. If you want, you can add onions. First, soak 1 heaped cup rice in water for 30 minutes.

Use any regular rice. I used sona masuri rice. You can also cook the rice in a pot. If cooking in a pot, then you may need to add more water.

Depending on the quality of rice, you can even cook for 2 whistles or 9 to 10 minutes. Later squeeze the soaked tamarind in the water to get the tamarind pulp. Strain and keep aside. Allow the cooked rice grains to become warm or cool down.

Cover and keep so that the rice grains do not dry out.

The cooked rice grains should be separate. As soon as you chop them, place them in a bowl containing water to which some salt has been added. Do make sure that there is sufficient water covering the brinjals. Allow them to be in the salted water for 15 to 20 minutes. Just remove the brinjals from the salted water and add in the pan.

Be careful as the mixture splutters when adding brinjals. Cover the pan with a lid and let the brinjals get half-cooked. Do check at intervals. Then cover and cook.
